Taco Tuesday just got a whole lot better! What makes this recipe so great is that it only includes 5 ingredients that you probably already have in your pantry. The chicken soaks up all of the flavors from the seasoning and the salsa and is perfect for taco night!
You can even use this recipe for taco salads or nachos. It’s definitely one you want to save and add to your weeknight rotation or anytime you need a quick meal and don’t have a lot of time.
Ingredients For Instant Pot Tacos
Boneless Skinless Chicken Breast: 2-3 chicken breasts is all you need! Two is enough for a family of 4 or use three chicken breasts for a larger family or if you want leftovers for lunch!
Salsa: Grab your favorite jar of salsa and let it do most of the work to flavor your chicken breasts!
Chicken Broth: Chicken broth helps give the instant pot enough liquid to come to pressure and it also adds extra flavor to the chicken breasts.
Taco seasoning & Salt: You can use your own homemade taco seasoning or a store bought taco seasoning.
Step-By-Step Instructions
This is probably the easiest dinner recipe to make in your Instant Pot. Full instructions are included in the recipe card below, but here’s a quick overview:
Step One: Season your chicken breasts with salt and taco seasoning.
Step Two: Add your salsa and chicken broth to the instant pot. Then place your seasoned chicken breasts on top of the salsa.
Step Three: Close the lid and turn the pressure valve to sealing. Pressure cook on high for 12 min. Allow the instant pot to do a natural pressure release for 5 minutes, then quick release any remaining pressure.
Step Four: Remove the lid and carefully remove the chicken breasts onto a plate or cutting board. Shred the chicken breasts with two forks and then add the meat back to the instant pot. Stir with the salsa and let chicken rest for 3 minutes to soak up more of the sauce. Enjoy with flour tortillas and your favorite toppings like cheese, tomatoes, fresh cilantro, sour cream or more salsa.
Which Instant Pot Do You Need?
You can use any Instant Pot to make these chicken tacos, but I use the Instant Pot Duo 6 quart (which is an older model). My favorite things to cook in the instant pot are Sweet Potatoes, Jasmine Rice and Turkey Chili. It really is a game changer for me.
