Roasting vegetables is my favorite way to enjoy vegetables anytime of the year. It’s mostly hands off and the flavor is simply unmatched. This Roasted Asparagus recipe is quick and easy and only takes 15 minutes from start to finish. I now include it with our family dinner once a week during the spring and summer months when asparagus is in season to get those green vegetables in. It’s just too easy not to!😊

How To Roast Asparagus
Asparagus is one of the easiest vegetables to prepare and cook. I keep things simple in this recipe with just olive oil, salt, pepper, and garlic. Here’s how to cook it:
Step One: Start by giving the asparagus a quick rinse under cool water, dry them really well, then place the asparagus on a cutting board. Trim off the thick woody stem at the end of the asparagus spears.
Step Two: Add the asparagus to a large sheet pan. Drizzle the olive oil over the asparagus and rub the oil into the spears. Now sprinkle the salt, pepper, garlic powder, and minced garlic over the asparagus. Toss together with your hands or tongs until all the asparagus is coated with the seasoning.
Step Three: Now all you have to do is bake the asparagus until its roasted and fork tender. The time will vary slightly depending on the thickness of your asparagus spears. For thinner spears bake for 8-10 minutes. For thicker spears bake for 10-12 minutes.
Extra Tip!
After you have roasted your asparagus, feel free to add some grated parmesan cheese, a squeeze of lemon juice, or a little lemon zest for an extra pop of flavor! Or you can switch things up by using lemon pepper seasoning like I did with this Air Fryer Asparagus if you want a slightly different and bolder flavor!
Serving Suggestions
Most of the time I serve roasted asparagus with lean protein like sautéed chicken breasts or baked chicken breasts. But I also love to have it with baked fish, shrimp, or tossed in pasta like this chicken asparagus pasta recipe. It’s also perfect to add to a vegetable frittata or breakfast omelet.
