Taco Soup

Iโ€™m a big fan of all things taco related and I couldnโ€™t wait to share this new Taco Soup recipe with you all. Itโ€™s a mix of all your favorite taco flavored ingredients along with beans, corn, and a flavorful broth for the perfect soup combination! You can customize it with all of your favorite taco toppings, it makes a big batch, it's super comforting, and itโ€™s ready to eat in just 30 minutes!

Easy Taco Soup Recipe

I love easy meals made with wholesome ingredients and itโ€™s even better if itโ€™s all cooked in one big pot! This taco soup is so easy to make and itโ€™s very similar to my chicken tortilla soup recipe. But this time Iโ€™m using ground beef which cooks a whole lot faster along with extra beans and corn to bulk up the soup some more. A simple soup recipe with tons of flavor is always a win in my book!

Hereโ€™s What Youโ€™ll Need

  • Ground Beef: I really wanted to use lean ground beef in this recipe, but you can easily swap it out for ground turkey instead.
  • Bell Pepper and Onion: Diced onion and bell pepper get sautรฉed with the meat to build the foundation of flavor for the soup. 
  • Taco Seasoning: I made my own taco seasoning mix and added a little bit of Adobo seasoning as well. 
  • Tomatoes, Beans and Corn: A couple cans of Rotel tomatoes, pinto beans, black beans, and frozen corn help bulk up the soup to make it super filling!
  • Broth: You can use either chicken broth or beef broth depending on which one you have in your fridge.

How To Make Taco Soup

The full instructions are included in the recipe card below, but hereโ€™s a quick step-by-step overview:

Browned ground beef with onions and bell peppers in a pot.

Brown the ground beef then add the diced onions and bell pepper. Sautรฉ the veggies until they are tender.

Tomato paste and taco seasoning added to the pot.

Stir in the tomato paste and taco seasoning. Cook for another minute.

Diced tomatoes, beans, corn, and chicken broth added to the pot.

Now add in the remaining ingredients (diced tomatoes, beans, corn, and broth)

Bring the soup up to a boil, then reduce the heat and simmer for 15-20 minutes. Enjoy with your favorite toppings!

Letโ€™s Add Some Toppings!

This is where you get to customize your taco soup with your favorite toppings. I personally like adding shredded cheese, green onions, crispy homemade tortilla strips, and a little bit of sour cream. It would also taste great with fresh cilantro, chunks of avocado, fresh diced tomatoes, or drizzle some of my homemade cilantro lime crema on top!๐Ÿ˜‰

Equipment

  • Dutch Oven

Ingredients
  

  • 1 lb. lean ground beef
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • ยฝ tablespoon ground cumin
  • 1 teaspoon fine sea salt
  • 1 teaspoon adobo seasoning
  • ยฝ teaspoon smoked paprika
  • ยฝ teaspoon dried oregano
  • 2 10 oz. cans diced tomatoes with green chiles (rotel)
  • 1 15 oz. can black beans, drained & rinsed
  • 1 15 oz. can pinto beans, drained & rinsed
  • 1 cup frozen corn
  • 3 cups chicken broth (or beef broth)

Instructions
 

  • Heat a large dutch oven or soup pot over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
  • Add the diced onion and bell pepper to the pot. Stir and cook with the beef for 2-3 minutes.
  • Now add the tomato paste and the seasonings (chili powder, ground cumin, salt, adobo seasoning, smoked paprika, and dried oregano). Stir everything together and cook for 1 minute.
  • Next add both cans of diced tomatoes with green chiles, black beans, pinto beans, frozen corn, and the broth. Stir until everything is combined.
  • Bring the pot up to a boil. Once it starts boiling, lower the heat to medium-low, cover with a lid, and simmer for 15 minutes.
  • Once the soup is done, serve in a bowl with your favorite toppings.

Notes

Storage: Store any leftover soup in an airtight container in the refrigerator for up to 3 days or freeze it in freezer-safe bags or containers for up to 3 months.
