Easy Chicken Tetrazzini Casserole

This easy Chicken Tetrazzini recipe has been a favorite in my family for years! It's full of tender chicken meat, vegetables, and just a few pantry ingredients for a simple yet super satisfying meal. I love making this casserole for Sunday dinners or whenever I'm craving a creamy, cozy, chicken pasta dish. And did I mention this recipe makes a lot?! So we always have leftovers which means I don't have to worry about dinner the following night. Winning!

This is an oldie but goodie family recipe that my mom shared with me years ago. It’s creamy, a little cheesy and packed with tender chicken breast meat. It’s hands down one of my favorites and the best part is it makes a lot! So there’s always leftovers.

What Is Chicken Tetrazzini?

Chicken Tetrazzini is an American casserole dish with several different variations, but it’s often made with some type of poultry like chicken or turkey, mushrooms and pasta in a creamy, buttery sauce and often topped with cheese.

Ingredients Needed

Here's what you'll need to make this delicious chicken tetrazzini recipe:

  • Chicken Breasts: I’m a chicken breast kind of girl so I prefer using shredded chicken breasts in my chicken casserole, but feel free to use chicken thighs or even a rotisserie chicken to make it really easy.
  • Celery, Bell Pepper and Onion: A combination of chopped celery, green bell pepper and onion (often called the Holy Trinity of vegetables) adds the foundation and gives this recipe tons of flavor!
  • Cream of Mushroom and Cream of Chicken Soup: Grab a can of both to add more flavor and a creamy texture to the casserole.
  • Egg Noodles: My pasta of choice for this dish is egg noodles, but spaghetti pasta will also work just fine.
  • Chicken Broth: Chicken broth is needed for extra moisture, flavor, and to help the ingredients come together.
  • Sharp Cheddar Cheese: Definitely don't skip the cheese at the end and make sure it’s sharp cheddar cheese.
  • Salt & Pepper: Just a little bit of seasoning is all you'll need since the recipe will have lots of flavor from the rest of the ingredients.

How To Make Chicken Tetrazzini

The full instructions are included in the recipe card below, but here’s a quick step-by-step overview:

Step One: Boil your chicken breasts using this slow-boil method. This is a proven way to get the most tender, fall apart chicken breast meat. You can also use a rotisserie chicken intead.

Step Two: Dice the onion, celery, and bell pepper.

Step Three: In a large bowl add the cooked egg noodles, diced veggies, shredded chicken and the remaining ingredients (except the cheese). Gently mix everything together.

Step Four: Add everything to a buttered baking dish, bake in the oven until bubbly and lightly brown on top. Add the shredded cheese during the last 5-10 minutes of cooking.

Chicken Tetrazzini Casserole

This Easy Chicken Tetrazzini recipe is a creamy, delicious, and satisfying casserole that's made with simple ingredients and makes enough to feed a large family!

Ingredients
  

  • 10 ounces egg noodles
  • 3 cups cooked shredded chicken
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 2 ribs of celery, diced
  • 10 oz. can cream of mushroom soup
  • 10 oz. can cream of chicken soup
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 2 ½ cups chicken broth
  • 4 Tablespoons butter
  • 6 oz. shredded sharp cheddar cheese

Instructions
 

  • Preheat oven to 350°F. In a large pot of salted boiling water, cook pasta according to the package instructions. Once al dente, drain and set aside.
  • Shred the cooked chicken breasts or the rotisserie chicken with a fork.
  • In a large bowl add the cooked pasta, the shredded chicken, and the following ingredients - diced onion, bell pepper, celery, cream of mushroom soup, cream of chicken soup, salt, pepper, and chicken broth. Gently mix everything together. Do not add the butter or cheese at this step.
  • Next, add the butter to a 9x13-inch baking dish and place it in the preheated oven so the butter can melt. It should take approximately 3-4 minutes. Once the butter is melted, carefully remove the baking dish from the oven.
  • Add the chicken tetrazzini mixture to the buttered baking dish and spread it out evenly. Bake the casserole in the oven for 40 minutes. The sides will be bubbling at this point.
  • Carefully remove the casserole dish from the oven and add the sharp cheddar cheese on top. Place the dish back in the oven for 5 minutes or until the cheese is melted.
  • Once done remove the chicken tetrazzini from the oven and allow it to rest for 5-10 minutes, enjoy!

Notes

2 large chicken breasts is often what I use and ends up being plenty, but if you want a little more chicken, then cook 3 chicken breasts instead.
If you are using a 12 ounce bag of egg noodles, be sure to only use ⅔ of the bag (approximately 10 ounces). If you use the entire bag it will be too many noodles.
