Start by prepping the ingredients. Drain and rinse the black beans, dice half of a red onion and half of a bell pepper, then grate your cheese if you're using block cheese.
In a large bowl, add the beans, onion, bell pepper, corn, taco seasoning, and the shredded cheese. Mix all the ingredients together to combine.
Now assemble the quesadillas. Add about ⅓-1/2 cup of the black bean mixture to one side of a tortilla. Fold the empty side of the tortilla over the filling. Repeat this step until all 6 quesadillas are prepped.
Heat a large skillet over medium heat and melt ½ tablespoon of butter. Add 2 quesadillas to the skillet. Cook the quesadillas for 1-2 minutes on each side until they are golden brown. Continue cooking each of the quesadillas, adding more butter as needed, until all of the quesadillas are golden brown.
Cut each quesadilla in half and serve with cilantro lime crema, some fresh chopped cilantro, and any of your favorite toppings. Enjoy!

I love making homemade taco seasoning, but you can also use 1 store-bought package as well.
Any combination of your favorite cheese blend will work just fine.
