Black Bean Quesadillas

These Black Bean Quesadillas are quick, easy to make, super flavorful, and just so good! They only require 8 ingredients all of which you probably already have at home. And they’re so easy to customize. Keep them vegetarian for a tasty meatless Monday option or add some cooked chicken or steak for a super hearty meal!

And of course I’m all about quick dinner meals that can be made in less than 30 minutes like these yummy quesadillas. These 30-minute Sheet Pan Chicken Fajitas are another one of my family’s favorites!

Here’s What You’ll Need

You only need 8 simple ingredients to make this easy black bean quesadilla recipe:

  • Black Beans and Vegetables: Canned black beans with a combination of onion, bell pepper and sweet corn helps make the veggie-packed filling. But feel free to mix-and-match with your favorite vegetable combination!
  • Shredded Cheese: Grab a block or two of your favorite cheese blend and grate it yourself for that gooey, melty finish. Or a bag of pre-shredded Mexican cheese will also work just fine. I like using Monterey jack and cheddar or Colby-jack cheese.
  • Taco Seasoning: I use my homemade taco seasoning for these quesadillas, but you can also use store-bought taco seasoning. 
  • Flour Tortillas: You’ll need approximately 6-8 flour tortillas to hold all of the yummy bean mixture. I like using the taco size tortillas, but you can also use the smaller fajita tortillas and make several more quesadillas. The smaller size also makes it fun for kids to help and they’re easier to flip in the skillet.

How To Make Black Bean Quesadillas

Start by prepping the ingredients: drain and rinse the black beans, dice the onion and bell pepper, and grate the cheese.

Add all of the filling ingredients to a large bowl including the taco seasoning. Mix everything together to combine.

Open flour tortilla with black bean filling on top.

Add about â…“ cup of the filling to half of the tortilla and flip the other half over the top.

Assemble all of the quesadillas ahead of time to speed up the cooking process.

Cook each quesadilla until golden brown. Then just serve with your favorite toppings and enjoy!

I like to make a batch of creamy cilantro lime crema to drizzle on top of my black bean quesadillas. It's so good!!!😉

Black Bean Quesadillas

Equipment

  • Large Grater

Ingredients
  

  • 15 oz. can black beans, drained and rinsed
  • ½ red onion, diced
  • ½ bell pepper, any color, diced
  • 1 cup frozen sweet corn
  • 2 tablespoons taco seasoning*
  • 2 cups shredded cheese**
  • 6-8 flour tortillas
  • 2 tablespoons butter, divided

Instructions
 

  • Start by prepping the ingredients. Drain and rinse the black beans, dice half of a red onion and half of a bell pepper, then grate your cheese if you're using block cheese.
  • In a large bowl, add the beans, onion, bell pepper, corn, taco seasoning, and the shredded cheese. Mix all the ingredients together to combine.
  • Now assemble the quesadillas. Add about â…“-1/2 cup of the black bean mixture to one side of a tortilla. Fold the empty side of the tortilla over the filling. Repeat this step until all 6 quesadillas are prepped.
  • Heat a large skillet over medium heat and melt ½ tablespoon of butter. Add 2 quesadillas to the skillet. Cook the quesadillas for 1-2 minutes on each side until they are golden brown. Continue cooking each of the quesadillas, adding more butter as needed, until all of the quesadillas are golden brown.
  • Cut each quesadilla in half and serve with cilantro lime crema, some fresh chopped cilantro, and any of your favorite toppings. Enjoy!

Notes

  1. I love making homemade taco seasoning, but you can also use 1 store-bought package as well.
  2. Any combination of your favorite cheese blend will work just fine.
