These Black Bean Quesadillas are quick, easy to make and taste unbelievably good! This recipe only has 8 ingredients, all of which you may already have at home. And making it is so easy. It's practically impossible to mess up. On top of that it has no meat and is still very filling making it perfect for meatless Monday and a great vegetarian option too!
INGREDIENTS YOU WILL NEED
Black Beans - One can of black beans drained and rinsed.
Whole Sweet Corn - You can use frozen or canned corn. Make sure to drain and rinse if using canned corn.
Red Onion - Just half of a red onion.
Garlic - One garlic clove finely minced.
Cilantro - dried cilantro or fresh will work too.
Shredded Cheese - Fresh or prepackaged cheese. Use a cheese blend like cheddar jack or Mexican shredded cheese.
Taco Seasoning - You can easily make your own homemade taco seasoning or grab some at your local store.

HOW TO MAKE BLACK BEAN QUESADILLAS
Full instructions are included in the recipe below, but here’s a quick overview:
Step One: Drain and rinse the black beans and add them to a large bowl. Drain and rinse the corn or steam the corn for 2 minutes in the microwave if using steamable frozen corn. Add the corn to the bowl.
Step Two: Next add the finely chopped red onion, minced garlic and cilantro to the bowl. Toss in the shredded cheese and taco seasoning. Give everything a stir making sure all the ingredients are well combined.
Step Three: Add 2 to 3 nice size tablespoons of the black bean mixture to one side of a tortilla. Fold the tortilla in half then cook in a large skillet sprayed with cooking oil on medium heat until golden brown on both sides.
Step Four: Top with your favorite toppings and enjoy!
