Preheat the oven to 350°F and line a baking sheet with parchment paper.
Grate the sharp cheddar cheese with a grater. In a large bowl add the breakfast sausage, bisquick baking mix, and shredded cheese.
Using clean hands mix all three ingredients together very well until they are well combined.
Pinch off bite-size pieces (about 1 tablespoon each) of the sausage mixture and roll into balls.
Place the sausage balls on a parchment lined baking sheet spaced apart. Bake for 25 minutes or until fully cooked and golden brown. Serve for breakfast, at game day parties, or as a holiday appetizer.

I usually make about 25 sausage balls, but you can make them a tad bit smaller and get roughly 30 sausage balls to feed more people.
