Do you remember the recipes that your mother and grandmother made around the holidays? One of the recipes that my mom always made every year for Christmas was Sausage Balls. It just wasn’t Christmas without it. Not only was it a favorite in our house, but also a favorite with lots of our close family and friends. And what I love about sausage balls is that it only requires 3 simple ingredients. So let’s get into this yummy and slightly addictive Sausage Balls recipe!
What Are Sausage Balls?
Sausage Balls are tasty little sausage bites made with breakfast sausage, cheddar cheese, and biscuit baking mix. It’s super simple to make and perfect for Christmas or any holiday gathering. But of course you can enjoy these delicious bites anytime of the year!
Ingredients To Make Sausage Balls
You only need 3 simple ingredients to make these easy sausage balls:
- Ground Breakfast Sausage - You can use mild or hot pork sausage. Sometimes my mom makes half mild and half hot just to mix it up a little. I've only tested these with pork sausage, but feel free to try them with turkey or chicken sausage as well!
- Sharp Cheddar Cheese - I definitely recommend using sharp cheddar for better flavor versus mild cheddar. I also like grating my cheese from a block, but you can also use pre-shredded cheese.
- Biscuit Baking Mix - Biscuit baking mix is the 3rd ingredient and it helps bind the sausage balls together. The Bisquick brand is what we've always used, but feel free to use a different brand or a homemade version.
Step-By-Step Instructions
Full instructions and measurements are included in the recipe card below, but here’s a quick overview:
Step One: Grate the sharp cheddar cheese with a grater. In a large bowl add the breakfast sausage, shredded cheese, and bisquick baking mix.
Step Two: Mix all three ingredients together with clean hands until they are very well combined.
Step Three: Pinch off bite-size pieces (about 1 tablespoon each) of the sausage mixture and roll into balls. Place the sausage balls on a parchment lined baking sheet spaced apart. Bake until fully cooked and golden brown. You can serve sausage balls by themselves, with other breakfast foods, or as a party appetizer.
* My sausage balls are on the larger side and I was able to make 25 sausage balls. If you would like to make more, just make the sausage balls a tad bit smaller and you can easily get 30-35 sausage balls. The larger size is perfect for breakfast, but smaller sausage balls would be better for a party appetizer.
Storing & Reheating
You can easily store any leftover sausage balls in the fridge or freezer. Once they have cooled to room temperature, store in an airtight container for 3-5 days in the refrigerator or in a freezer-safe storage bag for up to 3 months in the freezer.

- 2 cups biscuit baking mix like Bisquick
- 1 ½ cups shredded sharp cheddar cheese
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Grate the sharp cheddar cheese with a grater. In a large bowl add the breakfast sausage, bisquick baking mix, and shredded cheese.
- Using clean hands mix all three ingredients together very well until they are well combined.
- Pinch off bite-size pieces (about 1 tablespoon each) of the sausage mixture and roll into balls.

Can I freeze and reheat these easily?

Yes! To freeze any leftover spinach balls first place them on a parchment lined plate and freeze them separated for 2-3 hours. Once they are all frozen, transfer them to a freezer-safe bag or container and freeze for 2-3 months. This ensures the spinach balls don't stick together when frozen. To reheat just place the frozen balls on a baking sheet and reheat in a 350°F oven until heated through!
