Preheat the oven to 375°F. Melt the butter in a small saucepan or in the microwave and set it aside.
Now cook the chopped spinach in the microwave according to the package instructions (usually about 5-7 minutes). Allow the spinach to cool, then drain and squeeze out the liquid from the spinach using a colander or mesh bag. Be sure to squeeze as much liquid as you can out of the spinach.
Next in a large bowl combine the spinach, stuffing mix and all the remaining ingredients (butter, Italian seasoning, garlic powder, finely diced onion, beaten eggs, and parmesan cheese). Mix all the ingredients together until thoroughly combined.
Using a spoon or a medium cookie scoop, scoop small portions of the spinach mixture and roll it using your hands into small balls. Place the spinach balls on a parchment or non-stick aluminum foil lined baking sheet spaced apart.
Bake the spinach balls in the preheated oven for 17-20 minutes, until lightly golden brown. Enjoy!
Notes
Frozen chopped spinach often comes in different sizes. Roughly 20 oz. is what you’ll need, but if your package comes with a little more or less that is ok for this recipe.
I use the Stove Top brand that is cornbread flavored.
