Easy Spinach Balls

Spinach Balls are not only easy and fun to make but they also taste delicious! Chopped spinach is mixed with simple savory ingredients and rolled into cute bite sized balls that are perfect for lunch, dinner, appetizers or any holiday occasion!

Spinach Balls

So you probably won't believe it but I’ve been making this yummy recipe since college...yes a long time! And it’s always been a favorite of mine. There are only 8 ingredients and it's super simple to make. So I am beyond excited to finally share this recipe with you today! And if you love bite-sized party foods, then you've got to try my Philly Cheesesteak Sliders and 3-ingredient Sausage Balls next!

Ingredients You'll Need

Here's everything you need to make these tasty spinach balls:

  • Chopped Spinach: I use chopped frozen spinach in this recipe. Any brand will do. Then just steam cook it in the microwave according to the package instructions.
  • Stuffing Mix: There are a few different brands of stuffing mix out there. I use the Stove Top brand that is flavored with a cornbread seasoning (side note: I only use store bought stuffing for recipes like this, I make my own cornbread dressing lol.)
  • Seasoning: Italian seasoning and garlic powder adds those classic, savory flavors to the spinach balls.
  • Onion: Just one small finely diced onion will give these spinach balls tons of flavor!
  • Parmesan Cheese: Shredded parmesan cheese also adds lots of great flavor. Feel free to use fresh or prepackaged cheese.
  • Butter and Eggs: Butter adds moisture and more flavor and the eggs help bind all the ingredients together. *I only have 3 eggs pictured below, but the recipe does need 4 eggs.

These are so easy and delicious!! I even froze them then reheated before serving. They were gone in minutes!

How To Make Spinach Balls

The full instructions are included in the recipe card below, but here’s a quick overview:

Squeezing the liquid out of the spinach.

Prepare the spinach: Cook the spinach in the microwave according to the package instructions. Allow the spinach to cool, then drain the liquid really well with a colander or mesh bag.

Mix everything together: In a large bowl, combine the stuffing mix, onion, seasoning, melted butter, cheese, eggs and the drained spinach. Mix everything together until it's well combined.

Make the spinach balls: Use a cookie scoop or spoon to make small portions of the mixture and roll it into small balls. Place the spinach balls on a baking sheet.

Bake and enjoy: Bake in the oven until lightly golden brown. That's it! It's so easy and super fun to make!

Helpful Tip!

If you are lining your baking sheet, be sure to use non-stick aluminum foil or parchment paper to prevent the spinach balls from sticking to the pan.

Easy Spinach Balls

  • Fine Mesh Cheesecloth
  • Cookie Scoop
  • Baking Sheet Pan

Ingredients
  

  • ½ cup butter, melted & cooled
  • 20 oz. frozen chopped spinach*
  • 2 cups stuffing mix**
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ cup finely diced yellow onion
  • 4 eggs, beaten
  • ½ cup shredded parmesan cheese

Instructions
 

  • Preheat the oven to 375°F. Melt the butter in a small saucepan or in the microwave and set it aside.
  • Now cook the chopped spinach in the microwave according to the package instructions (usually about 5-7 minutes). Allow the spinach to cool, then drain and squeeze out the liquid from the spinach using a colander or mesh bag. Be sure to squeeze as much liquid as you can out of the spinach.
  • Next in a large bowl combine the spinach, stuffing mix and all the remaining ingredients (butter, Italian seasoning, garlic powder, finely diced onion, beaten eggs, and parmesan cheese). Mix all the ingredients together until thoroughly combined.
  • Using a spoon or a medium cookie scoop, scoop small portions of the spinach mixture and roll it using your hands into small balls. Place the spinach balls on a parchment or non-stick aluminum foil lined baking sheet spaced apart.
  • Bake the spinach balls in the preheated oven for 17-20 minutes, until lightly golden brown. Enjoy!

Notes

  1. Frozen chopped spinach often comes in different sizes. Roughly 20 oz. is what you’ll need, but if your package comes with a little more or less that is ok for this recipe.
  2. I use the Stove Top brand that is cornbread flavored.

      I honestly don't see why not. I would just make sure its covered tightly in the fridge and it may require a few extra minutes in the oven.

      Although I haven't tried doing that, I think it's a great idea. I would just make sure its covered tightly in the fridge and it may require just a couple extra minutes in the oven to bake.

    How much fresh spinach would you use instead of frozen & would I just wilt it?

      Great question. I haven't tried it with fresh spinach, but I would start with 4-5 cups, give it a rough chop, and wilt it in a skillet. Then proceed to squeeze out any excess liquid and follow the rest of the steps. Hope this helps!😊

      Hi there! I personally don't, but I wouldn't be opposed to it. Maybe some type of honey mustard sauce or a maple & dijon mustard combination. Since this is a more savory recipe I would maybe try something along those lines.

    Your recipe looks so good. However, I can't have regular stuffing mix. Is there anything else I can substitute it for? Also, can I cut back on the cheese? There's ALOT of sodium in cheese, especially those cheeses in this recipe. It's always the yummy ones 😋

    Fab U Lous recipe. I make again AND AGAIN. If i feel like a snack,I pop a few into the toaster oven at 400 degrees and watch them. Years ago, maybe in the 70’s we used to make this recipe. What goes around come around. But you cant beat it, and its also na crowd pleaser

      Hi Sheila, you'll need roughly 20 oz. of frozen chopped spinach. You can either purchase a large bag or 2 small boxes. Frozen chopped spinach often comes in different sizes depending on the brand, but approximately 20 oz. is all you need.     I made these to take as appetizer for St. Patricks Day party ( they are green).
    Everyone loved them. Everyone wanted recipe and said they were going to make for thanksgiving (I guess because of the stuffing in them?) Had some leftover mixture so made the rest the next day and they were just as good. The only thing is that mine stuck to the foil so I used parchment paper the following day and worked great. Thank you for the recipe. It’s a keeper.

    I buy chopped frozen spinach in big bags from Costco, but id love yo try this recipe. How many ounces each are your boxes of spinach? I've seen both 10 ounce and 12 ounces sizes at the market.

      I add sweet Italian sausage. Remove the casing and fry the meat after breaking it up. Once browned add it to the mixture.
      This recipe is very similar to our family recipe for thanksgiving stuffing.

    I haven't tried this recipe but I have made something similar for like 20 years. Instead of frozen spinach I used chopped frozen broccoli. People are always excited to see the Broccoli Balls come out. I will have to try this spinach version sometime!

    Yes, I made these as an appetizer for a party, thou I did substitute and used mozzarella cheese instead of the traditional parmesan cheese, so easy to make as a last minute plan!
