Baked Banana Nut Oatmeal

Easy Baked Banana Nut Oatmeal made with ripe bananas and simple ingredients, then baked in the oven for a delicious breakfast meal.

Ingredients
  

  • 2 ripe bananas
  • ¼ cup butter, melted
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • 1 ¼ cup vanilla almond milk or any milk
  • 2 eggs beaten
  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup chopped pecans

Instructions
 

  • Preheat oven to 375°F.
  • In a large mixing bowl, mash ripe bananas with a fork. Add melted butter, maple syrup and vanilla. Gently mix together. Next add almond milk and beaten eggs. Stir together.
  • To the same bowl add in your dry ingredients: rolled oats, baking powder, ground cinnamon, chopped pecans and salt. Gently mix all ingredients together with a spatula. Don’t overmix.
  • In a medium size baking dish (8x8 or 11x7) sprayed with cooking spray or butter on the sides and bottom, add oatmeal mixture and spread evenly.
  • Bake in the oven for 35-40 minutes.
  • Serve warm with some maple syrup drizzled on top and add extra fresh fruit or nuts if you like. Enjoy!

Notes

If using regular milk, use 2 teaspoons of vanilla.
