In a large mixing bowl, mash ripe bananas with a fork. Add melted butter, maple syrup and vanilla. Gently mix together. Next add almond milk and beaten eggs. Stir together.
To the same bowl add in your dry ingredients: rolled oats, baking powder, ground cinnamon, chopped pecans and salt. Gently mix all ingredients together with a spatula. Don’t overmix.
In a medium size baking dish (8x8 or 11x7) sprayed with cooking spray or butter on the sides and bottom, add oatmeal mixture and spread evenly.
Bake in the oven for 35-40 minutes.
Serve warm with some maple syrup drizzled on top and add extra fresh fruit or nuts if you like. Enjoy!
Notes
If using regular milk, use 2 teaspoons of vanilla.
