Baked Banana Nut Oatmeal

Enjoy this irresistible Baked Banana Nut Oatmeal with some warm maple syrup drizzled on top. It’s extremely easy to make and perfect for breakfast meal prep during the week.

Ripe bananas are mixed with rolled oats, almond milk, vanilla and a few other simple ingredients, then baked in the oven for perfect oatmeal. The best part is it’s super easy to cut into squares for individual servings or to place in the fridge when you want a quick, easy breakfast meal.

And if you’ve never been a huge fan of oatmeal, then prepare to be amazed by how good this recipe tastes. Baked oatmeal tastes more like a dessert than breakfast so the flavor is incredible and it makes eating oatmeal for breakfast way more fun!

INGREDIENTS YOU'LL NEED FOR THIS RECIPE

2 Ripe Bananas - using ripe bananas with a few brown spots gives this oatmeal the best flavor!

Old-Fashioned Rolled Oats - regular, rolled oats

Almond Milk - I like using vanilla flavored almond milk. You can also use regular whole milk or any non-dairy milk instead.

Butter - real butter, not the fake stuff

Eggs

Vanilla extract

Maple Syrup - 100% pure maple syrup or brown sugar

Baking Powder

Cinnamon

Salt

Chopped Pecans - walnuts would work too, but I think pecans taste better.

STEP-BY-STEP INSTRUCTIONS

Full instructions are included in the recipe card below, but here’s a quick overview:

Step One: In a large mixing bowl, mash ripe bananas with a fork. Add melted butter, maple syrup and vanilla. Gently mix together. Next add almond milk and one beaten egg.  

Step Two: To the same bowl add in your dry ingredients: rolled oats, baking powder, ground cinnamon, chopped pecans and salt. Gently mix all ingredients together with a spatula. Don’t over mix.

Step Three: In a medium size baking dish, sprayed with a little cooking spray or butter the sides and bottom, add oatmeal mixture and spread evenly. Bake in a preheated oven for 30 minutes.

Step Four: Once done, serve warm with some maple syrup drizzled on top. You can also add some fresh fruit and extra nuts on top as well. Enjoy!

STORAGE AND REHEATING

Baked oatmeal stores extremely well. Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual servings in the microwave or in the oven and serve warm with maple syrup on top!

Ingredients
  

  • 2 ripe bananas
  • ¼ cup butter, melted
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • 1 ¼ cup vanilla almond milk or any milk
  • 2 eggs beaten
  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup chopped pecans

Instructions
 

  • Preheat oven to 375°F.
  • In a large mixing bowl, mash ripe bananas with a fork. Add melted butter, maple syrup and vanilla. Gently mix together. Next add almond milk and beaten eggs. Stir together.
  • To the same bowl add in your dry ingredients: rolled oats, baking powder, ground cinnamon, chopped pecans and salt. Gently mix all ingredients together with a spatula. Don’t overmix.
  • In a medium size baking dish (8x8 or 11x7) sprayed with cooking spray or butter on the sides and bottom, add oatmeal mixture and spread evenly.
  • Bake in the oven for 35-40 minutes.
  • Serve warm with some maple syrup drizzled on top and add extra fresh fruit or nuts if you like. Enjoy!

Notes

If using regular milk, use 2 teaspoons of vanilla.

    Hi there, this recipe looks great! Could you add protein powder to this? If so how much?

      Hi Carrie, that's a good question. I haven't tried adding protein powder to this recipe. But if you typically add it to your regular oatmeal in the mornings, then it should work for this too! If you do give it a try I would suggest starting with a small amount to see how you like the taste. Let me know if you give it a try!
