Preheat oven to 350° degrees.
Combine all dry ingredients, except nuts, in a large bowl (flour, brown and white sugar, baking soda, baking powder, cinnamon, nutmeg and salt). Whisk dry ingredients together and set aside.
In a separate bowl, mash 2 ripe bananas then add melted butter, oil, milk and vanilla. Lastly add the beaten egg and mix all the wet ingredients together.
Pour wet ingredients into the large bowl with the dry ingredients.
Gently mix together until just combined, being careful not to over mix. Should only take about 20 mixes.
Now gently fold in chopped nuts into batter. DO NOT OVERMIX.
Scoop batter into muffin tins about ¾ full.
Bake for 25 minutes or until a toothpick is inserted and comes out clean. Carefully remove muffins from the oven and immediately transfer them from the muffin pan to a cooling rack to prevent them from overcooking. Enjoy!
