Banana Nut Muffins

Ingredients
  

Wet Ingredients

  • 2 ripe bananas mashed
  • 2 tablespoons butter melted
  • 2 tablespoons vegetable oil
  • 1 egg beaten
  • ½ cup milk
  • 1 teaspoon vanilla

Dry Ingredients

  • 1 cup all-purpose flour
  • cup brown sugar
  • ¼ cup white sugar
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup chopped walnuts or pecans optional

Instructions
 

  • Preheat oven to 350° degrees.
  • Combine all dry ingredients, except nuts, in a large bowl (flour, brown and white sugar, baking soda, baking powder, cinnamon, nutmeg and salt). Whisk dry ingredients together and set aside.
  • In a separate bowl, mash 2 ripe bananas then add melted butter, oil, milk and vanilla. Lastly add the beaten egg and mix all the wet ingredients together.
  • Pour wet ingredients into the large bowl with the dry ingredients.
  • Gently mix together until just combined, being careful not to over mix. Should only take about 20 mixes.  
  • Now gently fold in chopped nuts into batter. DO NOT OVERMIX.
  • Scoop batter into muffin tins about ¾ full. 
  • Bake for 25 minutes or until a toothpick is inserted and comes out clean. Carefully remove muffins from the oven and immediately transfer them from the muffin pan to a cooling rack to prevent them from overcooking. Enjoy!
