Simple and easy Apple Cinnamon Pancakes are full of flavor with hints of cinnamon and applesauce mixed in the batter, then topped with delicious cooked apples and maple syrup.
Peel and chop your apple(s) into bite size pieces.
Heat a small saucepan on medium low and melt your 2 tablespoon butter for your apples. Once butter is melted, add the chopped apples, brown sugar and cinnamon. Stir and let cook on low for 8-10 minutes. Set cooked apples aside.
Next mix all dry ingredients together in a large bowl.
Then in a separate bowl, combine buttermilk, melted butter, beaten egg and vanilla. Stir together.
Gently mix dry and wet ingredients together until just combined. Be sure not to over mix! Batter should be slightly thick.
Next fold in applesauce into batter and set aside.
Heat a large non-stick skillet over medium-low heat and coat with butter or coconut oil. Scoop ⅓ cup of pancake batter and add to skillet. You will be able to add 2-3 pancakes at a time. Or you can just do 1 at a time.
Cook a few minutes on each side. Flip once edges start to puff and bottom is golden brown. Repeat until all pancakes are cooked.
Top with the cooked apples and warm maple syrup and Enjoy!
Notes
You can use any sweet or semi-sweet apple like fuji, honeycrisp, or gala.
