Preheat the air fryer to 400°F. In a small bowl mix all of the spices (Italian seasoning, salt, paprika, garlic powder, smoked paprika and black pepper) until combined.
Place the chicken breasts on a cutting board. Cover them with plastic wrap or place them in a large food storage bag and pound the chicken with a meat mallet or rolling pin to even out the thickness.
Rub the oil over both sides of the chicken breasts. Divide the seasoning mix and place an equal amount on both of the chicken breasts. Rub the seasoning in on both sides of the chicken breasts, making sure they are thoroughly coated with the seasoning.
Place the chicken breasts in the preheated air fryer basket and air fry for 7 minutes on the first side, flip and cook for another 5-6 minutes on the second side, or until the internal temperature of the chicken reaches between 163°F - 165°F on an instant read thermometer. The carryover cooking will allow the chicken to reach 165°F as it rests.
Remove the chicken breasts from the air fryer and place on a plate tented with foil. Allow the chicken to rest for 3-5 minutes before serving.

You can easily divide this recipe into 4 servings and place into meal prep containers.
