Rarely do I jump on trends on social media, but this trending combination of parmesan, butter and potatoes just looked too good! These Parmesan Crusted Potatoes are crispy on the outside and perfectly soft on the inside. The butter mixed with the herbs and spices and parmesan cheese just gives these potatoes an incredible flavor. I decided to put my own spin on it by switching up the seasoning a little bit and oh my goodness, it tastes absolutely amazing. They're the perfect side dish for any meal!

If you’re tired of regular potatoes or mashed potatoes, then these parmesan crusted potatoes are definitely the way to go. The butter, herbs and parmesan soak into the potatoes and create a crispy crust on the outside, while still being perfectly soft on the inside. Don’t be surprised if your family asks you to make these every week!

Ingredients You’ll Need

I love that you only need a few simple ingredients to make these parmesan potatoes:

  • Baby Gold Potatoes: I like using Yukon baby gold potatoes for this recipe. Gold potatoes have a creamy, buttery taste and the skin is very thin so you don’t have to worry about peeling them. Just give them a good wash and you’re ready to go!
  • Butter: Make sure you’re using real butter instead of margarine for the best flavor.
  • Parmesan Cheese: Freshly shredded or grated parmesan cheese gives these potatoes that classic nutty, salty flavor!
  • Seasoning: I like to use a combination of Italian seasoning, garlic and onion powder, salt and pepper. It’s simple and combined with the parmesan it adds incredible flavor!

How To Make Crispy Parmesan Potatoes

The full instructions and measurements are included in the recipe card below, but here’s a quick step-by-step overview:

yukon gold potatoes cut in half and scored in a glass bowl

Step One: Wash the potatoes well then cut them in half and score the cut side of each potato in a tic-tac-toe design or something similar.

Butter, parmesan and spices mixed together in a baking dish.

Step Two: Combine the melted butter and spices together then pour the butter in a baking dish. Add the parmesan cheese on top and spread everything out evenly.

Potatoes added to baking dish cut side down.

Step Three: Add the potatoes to the baking dish cut side down. Gently press them into the cheese mixture.

Step Four: Bake the potatoes until they are crispy on the bottom and golden brown. These are so so good!

Ways To Serve Parmesan Potatoes

These parmesan potatoes are extremely versatile and can go with almost any meal. You can make them for breakfast to have with your bacon and eggs or enjoy them for dinner as a side with some baked chicken and sauteed green beans. Or if you’re like me you can simply eat them by themselves anytime of the day…because trust me they’re just that good!😊

Ingredients

  • 15-20 small baby gold potatoes
  • 4 tablespoons butter
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • ½ cup shredded or grated parmesan cheese

Instructions

  • Preheat the oven to 425°F. Wash the potatoes well then cut them in half lengthwise. Score the cut sides of the potato using a tic-tac-toe design or something similar. *see picture above. Set potatoes aside.
  • Melt the butter in a small bowl in the microwave or on the stovetop. Now add the Italian seasoning, garlic powder, onion powder, salt, and black pepper to the melted butter. Stir to combine.
  • Pour the melted butter mixture in the bottom of a 9x13 baking dish and spread it around evenly. Now sprinkle the parmesan cheese on top of the butter as evenly as possible.
  • Next add the potatoes to the baking dish cut side down. Gently press each potato into the butter and cheese mixture. Brush a little extra butter on top of each potato (I just use whatever is leftover from the bowl that I melted the butter in).
  • Bake the potatoes in the oven for 30-35 minutes or until the potatoes have a crispy golden brown crust. I like to go the full 35 minutes. Serve while they are warm and enjoy!

These potatoes are AMAZING! Hubby wants them all the time now. They were even great the second time around, though not as crispy. Have you found a trick or tip to get them crispy when reheating them? Thanks for a great recipe!

Hi Sheryl, thanks for sharing. I'm glad you love these potatoes as much as I do! The only tip I have to get them crispy when reheating is to try reheating them in a skillet on the stovetop. They still may not be as crispy as the first day, but it will be a little bit better than the microwave.

We love these! I've made them 4 different times already, to go with dinners. I'm in the process right now, making some to have an early dinner. They are just as good reheated. Thanks for the recipe!

Can I use shredded Parmesan if I don’t have a grated, will it make a difference?

Hi Rhonda, yes you can use shredded parmesan instead. Fresh grated or freshly shredded parmesan melts a lot better than the pre-packaged cheese. But either way it will still taste delicious!

I made this for my husband, it's now his new favorite. I took the mixture and coated my potatoes well, instead of placing them face down, they were still crispy out and tender inside delicious is all I can say. Ty

These are crispy and delicious. My husband and son request these OFTEN!!! They are a new favorite and pair well with almost any meal. You can switch up the herbs and spices and they can be paired with chicken and veggies for an easy sheet pan meal.
