Instant Pot Baked Potatoes

I absolutely love loaded baked potatoes. They're my go-to side dish at many restaurants but I also love to have them for lunch as a meal by themselves. If you love a good baked potato but you hate how long they take to bake in the oven, then you'll love these Instant Pot Baked Potatoes. They're quick, easy, and they cook perfectly using your Instant pot.

The best part about these Instant pot baked potatoes are that they're extremely versatile. They can be topped with so many fun and yummy things like chili, a tex-mex blend, more veggies like my roasted broccoli or simply eaten by themselves with the classic salt, pepper and butter combo! Whichever way you prefer to have them, one thing is certain...cooking them in the Instant Pot will make your life a whole lot easier!

Are Baked Potatoes Good For You?

Potatoes sometimes get a bad rap, but depending on how they are cooked, they can provide a really good amount of vitamins and nutrients. Here are a few health benefits:

  • Rich in Antioxidants. Believe it or not regular potatoes are rich in antioxidants which can help protect your body from free radicals and may help fight off certain diseases such as cancer.
  • Naturally Gluten-Free. Potatoes are naturally gluten-free which make them a great option for those with gluten allergies and sensitivities. 
  • Rich in Fiber. Potatoes are rich in fiber which helps promote a healthy digestive system and gut health.
  • Good source of Potassium which helps keep blood pressure down and supports cardiovascular health.

How To Cook Potatoes In The Instant Pot

The Instant Pot has literally changed my way of cooking and given me so much freedom and time back in the kitchen. I can cook rice, potatoes and an entire meal that comes out perfectly and in a fraction of the time. For cooking russet potatoes here is a quick step-by-step guide, plus the best cook times that I recommend based on the firmness that you are looking for in your potato.

Step One: Wash your potatoes thoroughly and pierce the outside a few times with a fork to allow steam to escape from the potato while its cooking.

Step Two: Insert the trivet rack into the inside of the Instant Pot. Place the potatoes on top of the trivet rack. Next add your water.

Step Three: Make sure the sealing ring is inserted into the Instant Pot lid. Close the lid and turn the pressure knob to sealing.

Step Four: I've tried quite a few different cook times for cooking baked potatoes in the Instant pot. If you are looking for soft potatoes where a knife can be inserted easily after cooking, then 24 minutes on high pressure for medium size potatoes is the way to go! If you are looking for a slightly firmer texture then I would suggest 20 minutes on high pressure for medium size potatoes.

Instant Pot Baked Potatoes

These Instant Pot Baked Potatoes are quick, easy, and they cook perfectly every time. Perfect any day as a side dish or a simple lunch.

Ingredients
  

  • 3 russet potatoes
  • 1 cup water
  • 3 tablespoon butter
  • ¾ teaspoon salt, divided
  • ¾ teaspoon black pepper, divided
  • Sour Cream optional
  • Chives optional

Instructions
 

  • Thoroughly wash the russet potatoes under water.
  • Pierce a few holes in each potato with a fork to allow steam to escape while they are cooking.
  • Insert the Instant Pot trivet rack and place the potatoes on the top of the rack. Pour 1 cup of water into the Instant Pot and close the lid. Make sure the sealing ring is always securely inserted.
  • Pressure cook on high for 24 minutes.
  • Allow a natural steam release for at least 15 minutes before removing the lid.
  • Be careful removing potatoes as they will be hot. Serve with butter and your favorite toppings like sour cream and chives! Enjoy!

Notes

  1. I usually cook 3 potatoes at a time, but my 6 quart Instant Pot can hold about 5-6 medium size potatoes. Be sure not to overfill or go past the fill line.
  2. Cook time does not include time for Instant Pot to reach pressure or natural steam release.
