Easy Roasted Broccoli Recipe

Roasted Broccoli is seriously one of the easiest vegetables to make and add to any dinner meal. It’s healthy and it tastes great with several different main dishes. It’s also really easy to customize and switch up the flavor. I wanted this recipe to truly be simple and flavorful, similar to my Air Fryer Asparagus, so you'll only need some olive oil and a blend of spices for this broccoli recipe. But you can certainly add some parmesan cheese or fresh lemon zest if you want. It’s so convenient and super easy to add to your weeknight veggie rotation!

What You'll Need

Here’s what I use to make this the easiest, tastiest, roasted broccoli you’ve ever had. It's literally only 5 ingredients:

  • Broccoli Florets: You can easily cut broccoli florets from the stems of broccoli crowns. Or you can buy a bag of pre-washed broccoli florets from your local grocery store.
  • Extra Virgin Olive Oil: Olive oil helps keep the broccoli from getting too dry as it roasts, it enhances the flavor, and it helps the broccoli caramelize in the oven. 
  • Seasoning: This is where you get to have fun! You can try out different seasoning combinations depending on the flavor you’re looking for and see what you like best! I wanted to keep things simple with this recipe, but also add lots of flavor. We’re using a combo of lemon pepper seasoning, salt, and garlic powder.

How To Roast Broccoli

Here's a quick overview with step-by-step photos. The full instructions and measurements are included in the recipe card below.

Step One: Cut the broccoli into bite-sized florets. Add them to a colander and give them a quick rinse. Dry the broccoli well with a paper towel or clean kitchen towel. Add the broccoli to a large bowl and drizzle with olive oil then add the spices. Toss all ingredients together until the broccoli is well coated.

Step Two: Add the seasoned broccoli to a parchment lined baking sheet in a single layer. Bake in a preheated oven for 16-18 minutes until the broccoli is tender and the edges are lightly browned. That’s it! Enjoy as a side with Sautéed Chicken Breasts or Baked Chicken Breasts for a super easy and healthy lunch or dinner recipe!

Roasting Times and Tips

  1. The time it takes to roast broccoli in the oven usually depends on your oven temperature and the size of your broccoli florets. I prefer to roast broccoli at 425°F for roughly 16-18 minutes until they’re crisp-tender and lightly golden brown around the edges.
  2. One of the best tips for roasted broccoli is to make sure your sheet pan is not too crowded. You’ll want to spread the broccoli out in an even layer with enough space so that the broccoli can caramelize and roast instead of steam as it bakes. If you're roasting a lot of broccoli at the same time, just divide it between two sheet pans.
  3. Don’t be afraid to experiment with different seasonings. Try out a garlic & herb all purpose seasoning mix, Italian seasoning, or your favorite taco seasoning. You can easily switch up the flavor each week if you want! 
  4. And have fun with the toppings! You can always add a squeeze of lemon juice or fresh lemon zest over the broccoli as soon as it comes out of the oven for an extra burst of bright flavor! For a nutty, cheesy flavor add some freshly grated parmesan cheese. And if you want a little heat just add a pinch or two of red pepper flakes.

Ingredients
  

  • 2 lb. broccoli florets
  • 2 Tablespoons extra virgin olive oil
  • 1 ½ teaspoons lemon pepper seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon fine sea salt*

Instructions
 

  • Preheat the oven to 425°F. Cut the broccoli into small florets. Add them to a colander and give them a quick rinse. Then dry the florets well with a paper towel or clean kitchen towel.
  • Add the broccoli florets to a large bowl. Drizzle the extra virgin olive oil over the broccoli. Combine the lemon pepper seasoning, garlic powder, and salt together in a small bowl. Then sprinkle the seasoning mix over the broccoli. Carefully toss the broccoli with your hands or a rubber spatula until the broccoli is evenly coated with the oil and spices.
  • Spread the broccoli out onto a parchment lined baking sheet in a single layer or leave the parchment paper off if you want your broccoli to be a little more crispy around the edges. Bake for 16-18 minutes until the broccoli is crisp-tender and lightly browned around the edges. Enjoy!

Notes

  1. Most lemon pepper seasonings include a good amount of salt. So I like to only add a tiny bit extra to help flavor the broccoli. Feel free to adjust the amount of salt based on the brand of lemon pepper seasoning that you use.

    I've always loved broccoli and just had to try this recipe! WOW! Amazing! The only problem is that I couldn't stop eating it! I will definitely be making this again!
