This Ground Turkey Enchiladas recipe is made with lean ground turkey meat, pork and beans, picante sauce and topped with lots of cheese for a delicious, Mexican-inspired weeknight dinner meal that comes together in just 30 minutes!
Let me start by saying this is not your traditional enchiladas recipe! This is a variation that my mother has been making for 20 years. Whenever she makes these they always go fast and are requested quite often! What I love most is that it uses fewer ingredients than the traditional version and comes together quickly, so it makes cooking dinner during the week pretty easy!

INGREDIENTS
Just a few ingredients makes this recipe really simple and easy to make!
Ground Turkey - Use a 93%/7% lean/fat ratio when choosing your ground turkey meat.
Picante Sauce or Enchilada sauce - I like using Pace Mild Picante Sauce in this recipe. It has a similar consistency to salsa, but not as thick. You can also use Enchilada sauce if you prefer.
Taco Seasoning - homemade taco seasoning or store bought taco seasoning mix.
Pork and Beans - one can of pork and beans
Flour Tortillas - 8 burrito size flour tortillas
Cheddar Jack or Mexican shredded cheese
STEP-BY-STEP INSTRUCTIONS
Full instructions are included in the recipe card below, but here’s a quick overview:
Step One: Preheat oven to 375°. In a large skillet, cook the ground turkey until cooked through and fully brown. Add taco seasoning with a splash of water, mix well and simmer for 2-3 minutes.
Step Two: Add seasoned ground turkey to a large bowl along with pork and beans and a little shredded cheese. Mix everything together until well combined.
Step Three: In a 9x13 oven-safe baking dish spread 1/2 cup of picante sauce on the bottom of the dish.
Step Four: Next prepare the flour tortillas by adding 3 tablespoons of the ground turkey mixture to the center of each tortilla. Roll the tortillas up tightly and place each one in the baking dish on top of the sauce, seam side down. Pour the remaining sauce on top of the tortillas. Then sprinkle cheese on top.
Step Five: Bake in the oven for 20 minutes or until cheese is completely melted and edges of tortillas are slightly brown. Enjoy with your favorite toppings!
VARIATIONS
One thing I love about Mexican-inspired recipes is that they are easy to customize to your liking. This one is no exception.
Ground Beef - Of course you can use ground beef instead of ground turkey if you want. My mom actually makes this with ground chuck, but I switched to ground turkey a few years ago for most of my recipes that use ground meat.
Beans - You can also switch out the beans for a different type of bean if you prefer. My mom has always made hers with pork and beans and that’s what I use as well. Our family loves it!
The Sauce - And of course you can use traditional Enchilada sauce instead of Picante sauce. You can make your own or buy some at your local store.
STORING
These ground turkey enchiladas store very well in the refrigerator and are perfect for leftover lunch the next day. Just store leftovers in an airtight container in the fridge for up to 4 days.

Easy Ground Turkey Enchiladas
Ingredients
- 1 tablespoon cooking oil
- 1 lb. ground turkey*
- 1 package taco seasoning (or homemade taco seasoning)
- 1/4 cup water
- 1 15 oz. can pork and beans drained
- 2 cups cheddar jack cheese or mexican blend cheese shredded
- 2 1/2 cups mild picante sauce or enchilada sauce
- 8 flour tortillas

- In a 9x13 oven-safe baking dish spread 1/2 cup of the picante sauce on the bottom of the dish.
- Next prepare the flour tortillas by adding 3 tablespoons of the ground turkey mixture to the center of each tortilla. Roll the tortillas up tightly and place each one in the baking dish on top of the sauce, seam side down. Pour remaining sauce on top of the tortillas. Then sprinkle the rest of the cheese on top.

Notes
- Make sure to purchase ground turkey that is either 85/15 fat ratio or 93/7.
- You can use store-bought taco seasoning package or homemade taco seasoning.
