Skillet Chicken Fajitas

This Skillet Chicken Fajitas recipe is an absolute favorite in our house! It starts with boneless, skinless chicken breasts marinated in a super flavorful fajita marinade then cooked with fresh bell peppers and onions for a quick, easy and delicious meal!

HOW TO MAKE EASY CHICKEN FAJITAS

Full instructions are included in the recipe card below, but here’s a quick overview:

Step One: Slice the chicken breasts into strips then marinate in the fajita marinade (listed below) for at least 1 hour in your refrigerator. Next slice bell peppers and onions into strips and set aside. 

Step Two: In a large skillet on medium heat, cook marinated chicken for 3-4 minutes on each side or until chicken is done. Remove chicken to a plate and set aside.

Step Three: Add the bell peppers and onions to the same skillet and saute for 4-5 minutes until they are tender but still crisp. Add a little more oil to the skillet if needed.

Step Four: Wrap tortilla shells in aluminum foil and place on a baking sheet to warm in the oven on 325 degrees for 8-10 minutes or quickly warm in a damp paper towel in the microwave for a few seconds. 

Step Five: Assemble fajitas with chicken, bell peppers, onions and your favorite toppings then enjoy!

HOMEMADE FAJITA MARINADE

This chicken fajita marinade really is a game changer! It gives the chicken and peppers so much flavor and seasons everything perfectly!

I like to start with a bowl or shallow dish that has a tight fitting top. To the bowl add the oil, minced garlic, all the spices and some fresh squeezed lime juice. Mix together well then add the chicken breast strips to the bowl. Stir the chicken strips around in the marinade making sure all the chicken is fully coated. Wash those hands, add a top and then refrigerate for at least 1 hour.

RECIPE TIPS

Don’t skip the marinade. The marinade is key to making these fajitas taste amazing! Try to marinate for at least 1 hour or more. But if you’re short on time, 30 minutes will still do the trick.
Use fresh ingredients. When possible use fresh garlic and lime juice in the marinade. It gives the marinade a better flavor and really makes a difference.

Ingredients
  

FAJITA MARINADE:

  • 2 tablespoon vegetable oil
  • 2 tablespoon fresh squeezed lime juice
  • 1 garlic clove minced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon fresh chopped cilantro or 1 teaspoon dried cilantro
  • ½ tablespoon Adobo seasoning
  • 1 teaspoon fine sea salt

Chicken Fajitas

  • 1 lb. boneless, skinless chicken breasts cut into strips
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 small onion red or yellow onion
  • 1 tablespoon cooking oil
  • Tortilla shells

Instructions
 

  • In a shallow bowl, combine all the marinade ingredients. Add the chicken breast strips to the bowl, cover with a lid, and marinate in the refrigerator for at least one hour. You can also let it marinate overnight.
  • While the chicken is marinating, slice the green bell pepper, red bell pepper, and onion into strips and set aside.
  • Remove the marinated chicken from the refrigerator. In a large skillet, add 1 tablespoon of oil and heat the skillet over medium heat. Cook the chicken strips for roughly 4 minutes on each side. Remove the cooked chicken from the skillet and set aside on a separate plate.
  • Add a splash of water to the skillet and scrape up any pan drippings leftover from the chicken.
  • Now add the bell peppers and onions to the skillet and sauté for 3-5 minutes.
  • While the bell peppers are cooking, wrap your tortilla shells in aluminum foil and warm them in the oven on a baking sheet at 325°F for 8 minutes or warm them in a damp paper towel in the microwave for 15-20 seconds.
  • Once the veggies are cooked to your liking, add the cooked chicken back to the skillet and turn your heat off. Garnish with fresh chopped cilantro and a fresh squeeze of lime juice.
  • Assemble your chicken fajitas with the bell peppers, onions and toppings of your choice. Enjoy!

Notes

Prep time includes time to marinate chicken.
Top with all of your favorite toppings.

    This is the BEST chicken fajita recipe I have ever made- it has so much flavor. It is now a family favorite and often requested by my family. My adult kids now make it for their friends and it has become our go to party recipe. Perfect!! I do double the marinade. I know Marsha says it is enough but we love the marinade so much that we want to be sure there is plenty when also cooking up the veggies.
