Salad greens - grab your favorite salad greens mix. Spinach, spring lettuce mix, romaine, arugula all work well with this salad.
Dried Cranberries

HOW TO MAKE AN APPLE FALL HARVEST SALAD
Full instructions and measurements are included in the recipe card below, but here’s a quick overview:
Step One: Make the homemade vinaigrette dressing and set aside. Wash the apples and slice or chop according to desired thickness. I prefer thin slices in this salad recipe.
Step Two: Add 2 handfuls of mixed salad greens to a bowl. Top with sliced apples, chopped walnuts, dried cranberries and salad dressing. That's it!
Feel free to add more toppings including some feta cheese or some grilled chicken breast to make it a meal.
HOMEMADE VINAIGRETTE DRESSING
As I’ve gotten older I’ve really started to gravitate more towards vinegar & oil based dressings versus dairy based dressings.
This simple vinaigrette includes extra virgin olive oil, apple cider vinegar, maple syrup, dijon mustard, a little fresh lemon juice, salt & pepper. Mix everything up in a small bowl or to make it easy just shake and store in these small half pint mason jars.

Apple Fall Harvest Salad
Ingredients
Vinaigrette Dressing
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon pure maple syrup
- 1 Tablespoon fresh lemon juice
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Salad:
- 4 cups mixed salad greens* I used 50/50 baby spinach & spring mix
- 1 Honeycrisp or gala apple
- 1 Granny smith apple
- 1/4 cup dried cranberries
- 1/3 cup chopped walnuts or pecans
Instructions
- Add all of the vinaigrette dressing ingredients to a small mason jar. Place the lid on tightly and shake together in the jar to combine well. Set aside.
- Wash both apples thoroughly. Slice according to desired thickness.
- Add 2 handfuls or mixed greens to a bowl. Top greens with sliced apples, dried cranberries and chopped nuts.
- Shake vinaigrette together again, in case oil and vinegar has separated, and pour over salad.
- Refrigerate any leftover dressing in a tightly sealed container in the refrigerator for up to 5 days.
Notes
- I used 50/50 baby spinach & spring mix.
- Feel free to add some feta or goat cheese and some grilled chicken if you want to make it a meal.
